Update, my vegan project was for 30 days. I expanded it to 40 days, but just now changed it back to 30 days. That doesn't mean I'm going to start eating meat again. I'm just being more flexible with my veganism. For instance, I will be more vegan at home, and be vegetarian when I go out to eat.

Cherry cheezecake...mmmmm!

Yesterday I made a cherry "cheese" cake and ate the whole thing that day it was so good. Vegan cherry cheesecake is the bomb.

 

  • 1 (8 ounce) container firm silk tofu
  • 1 (8 ounce) container nondairy cream cheese
  • 1 tablespoon lemon zest
  • 1 1/2 lemons, juiced
  • 1 cup confectioners' sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons almond or other non-dairy milk
  • 1 (21 ounce) can cherry pie filling
  • 1 pre-made graham cracker crust
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a blender, combine tofu, vegan cream cheese, lemon zest and juice, and confectioners' sugar. Dissolve cornstarch in almond milk, and add to the blender. Blend until smooth. Pour filling into crust.
  3. Bake for 25 minutes at 350 degrees F (175 degrees C). Reduce heat to 325 degrees F (165 degrees C), and continue baking for 15 minutes, or until set. Cool on a wire rack, and then chill for several hours.(2 hours is good.)
  4. Invert onto a plate, and then invert again onto a serving platter. Pour cherry pie filling over the top, and serve.Enjoy!

Vegan Bake Sale

Yesterday mom and I went to a vegan bake sale to benefit Harvest Home animal sanctuary- turlock hen resuce,  at Never Felt Better Vegan Shop.

 Look at all the yummy vegan treats!



I got a oreo cupcake, 3 chocolate chip cookies, and a cherry pie. It was all so delicious! And look! I got a couple of goodies from the shop, too!



So cute! It was a great day. After rehearsals I came home and made a cherry cheezecake which is still chilling in the fridge. I think I'm going to go have a piece. See ya a bit later!

Burritos! (Day 30)

Came home from rehearsals on Friday to burritos! Yum! They were brown rice and bean burritos. My mom added a little mexican flare to the rice by adding some chili powder and...other stuff which I can't think of at 7:00 on a Sunday morning. But anyways! Yeah, it was good.

Also, thin mints are vegan! So happy. Girl scout cookie season is here.

Milkshake madness! (vegan)

Basically for the past two nights I've had milkshakes. Wednesday I made a strawberry milkshake with soy vanilla ice cream and almond milk.

Then last night I made the cookies and cream milkshake. Again! So yummy.

Making nut burgers this weekend. Woot woot!
