Why eat mayonaise when you can have vegenaise? Tastes the same AND dairy free. For someone who doesn't like mayonaise, I am loving it.
Along with the sandwich I had quinoa blue corn tortilla chips and almonds. I came home and had a daiya cheddar cheese quesadilla on a blue corn tortilla with a side of arugula salad with balsamic vinegrette and cherry tomatoes. My taste buds are still adjusting, but daiya cheese will satisfy that cheese craving and soon I won't miss it.
And finally, the dinner I have been anticipating since yesterday, pumpkin bolani with pesto from the Co-op. I could eat bolani everyday if it wasn't so expensive.
It's only been a day, but so far I can tell this project is gonna be rad. Reading so much about veganism in Vegan Girl's Guide to Life by Melisser Elliott. It's giving me great substitues for dairy, and what would be good for protein. Some people are so close minded about veganism when they don't really understand what it's all about. I mean yeah, giving up cheese and ice cream and meat is a bit tough because it tastes so good. But looking at some of these vegan recipes, I would take them over a cheeseburger any day. I have also discovered the "accidental vegan treats" like oreos! And I found a recipe for cookies and cream cupcakes (my favorite.) Forget dairy and meat. My mouth is watering over tempeh and tofu.
