Last night for dinner I made udon noodles from the farmers market with thai peanut butter sauce. It was super good! Then again it was made with peanut butter, and peanut butter, well, just makes a girl a lot happier.
Thai Peanut butter sauce:
1/4 cup peanut butter
1/4 cup water
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic, minced and crushed
2 tbsp rice vinegear
In a small saucepan over medium-low heat, mix ingredients until sauce becomes smooth and creamy. Serve over...anything! In this case udon noodles that I just heated in the microwave for 2 minutes. Enjoy!
