For breakfast yesterday I made banana pecan pancakes from La Dolce Vegan! by Sarah Kramer. Definitely making these again! Yum!
Ingredients:
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp cinnamon
1 cup "milk" (I used almond)
1 banana
1 tsp vanilla
1/2 cup chopped pecans
In a medium bowl stir together the flour, baking powder, salt, and cinnamon. In a blender or food processor blend the "milk", banana, and vanilla until smooth. Pour into flour mixture and add pecans. Stir together. Pour batter onto hot non-stick pan or griddle and do the pancake thing. Makes about 4 medium pancakes. Enjoy!
