I put the tortillas in a oiled pan for a couple of seconds on each side to loosen them up so it's easy to roll your enchiladas.

Final Product. Yum! I love eating something good and knowing that it's good for me.
The recipe calls for canned enchilada sauce which is perfectly fine. But with this recipe I made my own enchilada sauce:
