On Monday I came home and had rice noodle ramen from the co-cop. Not so much like regular ramen, but it was still good. I think I just really like the noodle texture.
Then my mom made me "hot dogs" with smart dogs and potato chips, pickles, and onions. I didn't have any hot dog buns so I just used bread, but I think hot dog buns would be easier to eat with.
Last night I made more Blts (so yummy!) and afterwards I made a cookies and cream milkshake! That's the milkshake I was talking about in my last post. It was so veganly amazing it made me want to cry milkshake tears. Anyways, I downed it before I remembered to take a picture. But just imagine a creamy oreo mixture. I got more today to make more milkshakes. I am one happy kid.
I have decided to go vegan for 30 days as my project. I will be documenting what meals I eat and how I feel each day without animal products. I want to see if it is better for me to have dairy or not. After researching and learning more about animal products and it's affect on us, I want to change my taste buds and get rid of that craving for dairy so I can completely go vegan.

Day 26
Sooo yesterday was basically delicious. I made BLT's with tempeh bacon, got soy peanut butter chocolate ice cream, this yummy carrot raisin curry salad, and the most delicious vegan cherry cheescake ever from the Co-op. The BLT's were really easy to make, and really good.

This cheesecake was so amazing, oh my god all I want for my birthday is a hundred of these cheesecakes. I was so happy when I ate it. It tasted even BETTER than regular cheesecake.

Day 25
Like I said before, day 24 I ate nothing but brownies and sour patch kids. I had a junk food hangover the next morning. Then I went to eat MORE sugar but it was totally worth it because I went to doughbots!
Best doughnuts eva! I got 2 vegan maple, 1 vegan vanilla bean, and vegan lemon lavender and blood orange doughnut holes. Such vegan delicousness! I like their dougnuts because for one, they're vegan, and two they aren't sickening sweet. I'm so in love! And for the non-vegans, they have a great PB & J doughnut and smores doughnut. And when I used to eat bacon, I would get their bacon maple dougnut and bacon chocolate doughnut. I'm sure it would be great with tempeh bacon, too...well, maybe. Hehe.
Tonight I'm making vegan BLT's with tempeh bacon. Hope it turns out yummy! Enjoy this great day everyone!

Day 22 consisted of leftovers and nothing new. But day 23 I found a great recipe for vegan french toast that I made with cranberry walnut bread.

Day 21
On Tuesday, I made breakfast burritos with potato and tofu scramble from Little House of Veggies. It was pretty good! I recommend adding some tapitio sauce for a little kick.
I used spinach burritos. Mmmm! Last night for dinner I went to a Japanese restaurant and had a bowl of miso soup and Wakame salad. Then I ran over to Jamba Juice and had straight carrot/orange juice. It was all really good! I can't believe I only have 7 days left. This month has gone by so fast. Not that I'm going to stop my veganism. It wouldn't right to know all I know now about meat and dairy and suddenly start eating animal products again.
Alright, time for the day and the Kooks.

Day 20
Went to Clarks Corner again for dinner and had a spinach salad with a side of sweet potato fries. I came home with a sweet tooth so I looked in the dessert section of La Dolce Vegan! and found a simple apple crisp recipe.
Before going in the oven.
After. Mmmm! Quick, easy, and delicious. You can basically substitute anything you want in for the apples. Plum crisp is my favorite. Pear would be good, too.
Filling
2 apples, cored and chopped
1/4 cup brown sugar
1/2 tsp cinnamon
2 tsp lemon juice
1 tbsp flour
Topping
1 tbsp flour
3 tbsp sugar
1 cup rolled oat flakes
3 tbsp margarine, room temperature
Preheat oven to 375 and lightly oil 8 inch baking dish, or little ones like in the picture. In a medium bowl combine apples, sugar, cinnamon, lemon juice, and 1 tbsp flour. Spoon mixture into baking dish. In another medium bowl, stir together flour, sugar, oats, and margarine. Sprinkle on top of apples and bake for 40-45 minutes until browned on top. Enjoy!

Yesterday I ate mostly leftovers. But I did go to Tupelo Coffee House right down our street and got a bowl of soul! It's chamomile tea infused with soy milk and honey. It's my favorite thing to get there.

Day 17
Day 16's dinner consisted of nothing but a vegan mint chocolate milkshake made with hemp ice cream. Pretty good! I also found one of the most simple and tasty vegan snacks while babysitting: crispy tortilla peanut butter roll-up. Oh my god, why is peanut butter the most amazing thing ever. I can't even...ahh. I love food. Anyways, yesterday I went to sugar plum AGAIN! I was one happy vegan child.

Happy Valentine's Day!
For Valentine's Day, my valentine (my mother) took me to Sugar Plum for a yummy vegan treat.
Sugar Plum's AWARD WINING midtown "burger" with a nut patty and tempeh bacon with daiya cheddar cheese and other burger fixings. I can't even give a good enough description of this burger that would do it justice. But it was the best burger I ever had. And it wasn't even a real burger. I was so happy.

Vegan sweets! Chocolate covered strawberries, lemon lavender cupcake, a sticky bun, and 3 oatmeal whoopie pies. Mmmm!

Day 12
Yesterday was quite a yummy day. For dinner I made the vegan sloppy joes from Vegan Girl's Guide to Life. SO GOOD! Then I made vegan brownies. I was going to make vegan caramel sauce for them, but I was too lazy.
1 tbsp olive oil
1 small onion, sliced
3 cloves of minced garlic, or about 1/4 tsp garlic powder
8 oz tempeh, crumbled
1 green bell pepper, sliced in strips
2 tbsp mild chile powder
1 tsp cumin
1/2 tsp salt
1 can tomato sauce
1 tbsp brown sugar
1 tbsp yellow mustard
1/4 tsp liquid smoke (optional, but it's good!)
Preheat a skillet with olive oil over medium heat, add onion and saute for 5 minutes until translucent. Add the garlic and crumbled tempeh and saute for 3-5 minutes until lightly browned. Add the bell pepper allowing it to soften for about 3 minutes, then add the chile powder, cumin, and salt, stirring to coat. Stir in the tomato sauce, brown sugar, mustard and liquid smoke. Turn down the heat to medim-low and let simmer for about 10 minutes, allowing the sauce to coat everything. Serve hot on whole wheat hamburger buns and enjoy! Use napkins. They're messy. Hence the title. Duh.
Wasn't planning on making the brownies, but they sounded really good. And after making non-vegan brownies for my friend (very tempting), I wanted to make vegan ones for me! They were quite tasty. Next time I'm going to add the caramel sauce to make it a bit sweeter.
Goes best with a cold glass of almond milk!

3/4 cup cocoa powder
1 tsp baking powder
1 tsp salt
1 cup water
1 cup vegetable oil
1 tsp vanilla
Preheat the oven to 350 and grease a 9 x 13 pan. In a medium bowl stir together the ingredients until well blended. Pour into pan and bake for 25-30 minutes. Serve with a glass of almond milk :)

Day 11
Last night I attempted to make vegan carmalley popcorn from Vegan Girl's Guide to Life which I was really looking forward to, but unfortunately I burnt the caramel. Oh well. Live and learn. Otherwise I could tell it would have been really good! I mean, it looked pretty.
1/2 cup brown sugar
1/4 Earth Balance butter
1 tbsp maple syrup
1 tbsp brown rice syrup
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
3 tbsp popcorn kernels
1/2 cup roasted nuts (optional)
Preheat oven to 250 degrees. Pop the popcorn kettles and spread on greased baking sheet. If adding nuts spread out with popcorn. In medium saucepan bring brown sugar, maple syrup, rice syrup, and margarine to a boil and simmer for 10 minutes, stirring often. After it has deepened in color and thickened, remove from heat and add vanilla, salt, and baking soda. Pour the caramel over the popcorn and put in oven for 10 minutes. Remove and allow to cool slightly before eating. Enjoy and don't burn the caramel!

Day 10
Last night for dinner I made udon noodles from the farmers market with thai peanut butter sauce. It was super good! Then again it was made with peanut butter, and peanut butter, well, just makes a girl a lot happier.

2 tbsp lime juice

Sweet Tooth
Last night I indulged myself in a vegan junk food treat.
Yes, they're vegan! And full of sugar! Other vegan candy includes sweedish fish, redvines, twizzlers, oreos (what whaaat!), cracker jacks, nutter butters, and many others. I am so happy!

Day 7
Enchiladas went bad fast. Next time I think I will try a different recipe without the tofu. But anyways, for dinner I came home and made pesto pasta with the left over pesto sauce from the pumpkin bolani from last week. Quick and simple and yummy!
I boiled whole wheat pasta for about 10 minutes with about 1/2 tsp. of salt and mixed the pesto with it when it was drained. I love pesto! I also had a side of the vegan rosemary bread. Now off to watch a documentary, Forks Over Knives, about the affect of animal based and processed food. Should be very interesting. My mom says it's really good.
Also, kudos to my mom for juicing this whole week with all this food I'm making that she could be eating. She also made me vegan cream of broccoli soup. Yum!

I am not definitely not wasting any food through this project. Yesterday for breakfast I ate my cinnamon rolls, for lunch my wild rice salad, and for an after school snack a couple of the enchiladas.
For dinner, my mom used the rest of the sweet potatoes and made me mashed sweet potatoes with a side of mustard greens and rosemary bread with almond butter. Delish!

Day 5
Yesterday was a big messy cooking day, but I was very pleased with the results. For breakfast I made sweet potato pecan cinnamon rolls from healthyfoodforliving.com.
My food processor stopped working right when I was about to make the sweet potato glaze, so it was a bit chunky. I really didn't taste much of the sweet potato, but they still were really good. I could eat the pecan filling by itself!
For dinner I made wild rice salad with oranges and roasted beets from theppk.com (Post Punk Kitchen.) I think this was my favorite dish I made yet. I didn't realize that I actually liked beets until I made this dish!

Day 4- Dinner
For my dinner last night, I made delicious black bean enchiladas from www.happyherbivore.com. Get the recipe at www.happyherbivore.com/recipe/smokey-black-bean-enchiladas.
I put the tortillas in a oiled pan for a couple of seconds on each side to loosen them up so it's easy to roll your enchiladas.

The recipe calls for canned enchilada sauce which is perfectly fine. But with this recipe I made my own enchilada sauce:
